Bread with Nuts and Cranberries
Delicious and easy to prepare bread with nuts and cranberries. Perfect with coffee, tea or for breakfast.
• 1 1/2 cup all-purpose flour
• 2 teaspoon baking powder
• 1/2 teaspoon fine sea salt
• 3/4 cup dried cranberries
• 1/3 cup raw pecans
• 1/3 cup raw walnuts
• 3/4 cup softened butter
• 1/2 cup honey (preferably raw and unprocessed)
• 2 eggs
• 1/2 cup freshly squeezed orange juice
Preheat oven to 180 C. Grease a 22/12 cm loaf pan. In a medium sized bowl, whisk together flour, baking powder, and salt. Roughly chop the pecans and walnuts, set aside. In a large bowl, using a hand mixer, mix together butter and honey for about 1 minute. Stir in one by one eggs at a time, making sure to blend well after each addition. Next, slowly pour in the orange juice. Add the dry mixture to the creamed honey in four parts, beating mixture after each addition. Add in nuts and cranberries.
Transfer dough into prepared loaf pan, and cook for 55-60 minutes or until a toothpick inserted in the middle comes out clean. Serve warm with fresh nut butter or jam.
