Quinoa with amaranth and mushrooms

Exotic, tasty and healthy! A wonderful recipe for a main dish, suitable for vegans, vegetarians and people, allergic or sensitive to gluten.


  • 2 cups Quinoa
  • 1 cup Amaranth
  • 3-4 psc. Parsley
  • 1 clove Garlic
  • Rosemary
  • 8 mushrooms (medium size)
  • 1 psc. Leek
  • 2-3 spoons Olive oil


Stew the quinoa and amaranth with 3 cups of water.

Stew the chopped leek well until it softens. After that, add the quinoa and amaranth. Stew for around 10 minutes and put in a tray pan with water and olive oil. Bake until it softens fully and add the cut mushrooms, parsley, garlic and rosemary. Cook 10 more minutes until it is ready.
